In the Pétillant natural (also known as pét nat or methode ancestralis) method, the sparkling wine finishes the primary fermenting after bottling. The bubbles that result are from only the natural sugars in the grape at harvest. Pét Nat wines tend to be fruity, and can be bone dry or even sweet.

Charmat Method sparkling wines are produced by initiating a secondary fermentation in tanks. Bottled under pressure these wines are less labor intensive to craft compared to the traditional methode wines, but can be every bit as complex.
CO2 infused/carbonated wines won't say sparkling on the label, but the bubbles can be just as delightful. These wines allow the winemaker's creativity to shine since the vintner can perfect the balance before adding the final bubbles in a precise way. These are crowd pleasers to be sure.
